Lentil Soup
A hearty and comforting soup made with lentils, vegetables, and aromatic spices, often simmered in a flavorful broth.
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, and ground turmeric to the pot. Stir and cook for an additional minute until the spices are fragrant.
- Add the rinsed lentils to the pot, stirring well to coat them with the onion and spice mixture.
- Pour in the vegetable or chicken broth, and bring the mixture to a boil.
- Once boiling, reduce the heat to low and add the diced carrots and potatoes. Cover the pot and let the soup simmer for about 30-35 minutes, or until the lentils and vegetables are tender.
- Season the soup with salt and pepper to taste. Stir in the lemon juice and chopped parsley.
- Remove from heat and let the soup sit for a few minutes to allow the flavors to meld together.
- Serve hot, garnishing with extra parsley if desired.
