Lentil Soup

A hearty and comforting soup made with lentils, vegetables, and aromatic spices, often simmered in a flavorful broth.

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, and ground turmeric to the pot. Stir and cook for an additional minute until the spices are fragrant.
  3. Add the rinsed lentils to the pot, stirring well to coat them with the onion and spice mixture.
  4. Pour in the vegetable or chicken broth, and bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and add the diced carrots and potatoes. Cover the pot and let the soup simmer for about 30-35 minutes, or until the lentils and vegetables are tender.
  6. Season the soup with salt and pepper to taste. Stir in the lemon juice and chopped parsley.
  7. Remove from heat and let the soup sit for a few minutes to allow the flavors to meld together.
  8. Serve hot, garnishing with extra parsley if desired.
