Kibbeh Nayeh

Raw minced lamb mixed with bulgur and spices, served with olive oil.

Instructions

  1. Rinse the bulgur wheat under cold water and let it soak in a bowl of water for about 10 minutes, until softened. Drain well, squeezing out any excess water.
  2. In a large mixing bowl, combine the finely minced lamb, drained bulgur, grated onion, ground allspice, cumin, cinnamon, salt, and black pepper.
  3. Using your hands, knead the mixture until it is well combined and smooth. This should take about 5-7 minutes.
  4. Taste a small portion of the mixture to check seasoning and adjust if necessary. It should be well seasoned.
  5. Transfer the kibbeh mixture to a serving platter and shape it into a smooth mound or spread it evenly in a shallow dish.
  6. Drizzle the top with extra virgin olive oil and garnish with fresh mint and parsley.
  7. Serve immediately with pita bread and additional olive oil on the side.
