Kibbeh Nayeh
Raw minced lamb mixed with bulgur and spices, served with olive oil.
Instructions
- Rinse the bulgur wheat under cold water and let it soak in a bowl of water for about 10 minutes, until softened. Drain well, squeezing out any excess water.
- In a large mixing bowl, combine the finely minced lamb, drained bulgur, grated onion, ground allspice, cumin, cinnamon, salt, and black pepper.
- Using your hands, knead the mixture until it is well combined and smooth. This should take about 5-7 minutes.
- Taste a small portion of the mixture to check seasoning and adjust if necessary. It should be well seasoned.
- Transfer the kibbeh mixture to a serving platter and shape it into a smooth mound or spread it evenly in a shallow dish.
- Drizzle the top with extra virgin olive oil and garnish with fresh mint and parsley.
- Serve immediately with pita bread and additional olive oil on the side.
