Kaju Katli
A traditional Indian sweet made from ground cashews and sugar, shaped into diamond pieces.
Instructions
- Place the cashew nuts in a blender or food processor and grind them into a fine powder, being careful not to over-process as it can release oils and make a paste.
- Heat a non-stick pan over medium heat and add the sugar and water. Stir until the sugar dissolves completely to form a syrup.
- Add the cashew powder to the sugar syrup, stirring continuously to avoid lumps.
- Cook the mixture over low heat, stirring constantly, until it thickens and starts to leave the sides of the pan, forming a dough-like consistency. This should take about 8-10 minutes.
- Add the cardamom powder and rose water, mixing well. Continue to cook for another 1-2 minutes.
- Grease a flat surface or a large plate with a few drops of ghee. Transfer the cashew dough onto the greased surface.
- Allow it to cool slightly, then knead the dough gently with greased hands for a smoother texture.
- Roll out the dough to about 1/4 inch thickness using a greased rolling pin.
- Cut the rolled dough into diamond-shaped pieces using a sharp knife.
- Optional: Decorate with silver leaf for an authentic touch. Allow to cool completely before storing or serving.
