Kaju Katli

A traditional Indian sweet made from ground cashews and sugar, shaped into diamond pieces.

Instructions

  1. Place the cashew nuts in a blender or food processor and grind them into a fine powder, being careful not to over-process as it can release oils and make a paste.
  2. Heat a non-stick pan over medium heat and add the sugar and water. Stir until the sugar dissolves completely to form a syrup.
  3. Add the cashew powder to the sugar syrup, stirring continuously to avoid lumps.
  4. Cook the mixture over low heat, stirring constantly, until it thickens and starts to leave the sides of the pan, forming a dough-like consistency. This should take about 8-10 minutes.
  5. Add the cardamom powder and rose water, mixing well. Continue to cook for another 1-2 minutes.
  6. Grease a flat surface or a large plate with a few drops of ghee. Transfer the cashew dough onto the greased surface.
  7. Allow it to cool slightly, then knead the dough gently with greased hands for a smoother texture.
  8. Roll out the dough to about 1/4 inch thickness using a greased rolling pin.
  9. Cut the rolled dough into diamond-shaped pieces using a sharp knife.
  10. Optional: Decorate with silver leaf for an authentic touch. Allow to cool completely before storing or serving.
