Cashew nut stir-fry

A flavorful stir-fry featuring cashew nuts, vegetables, and a savory sauce, often served with rice or noodles.

Instructions

  1. Heat 1 tablespoon of the vegetable oil in a large wok or skillet over medium-high heat.
  2. Add the cashew nuts and stir-fry for 2-3 minutes until they are golden brown. Remove and set aside.
  3. In the same wok, add the remaining 1 tablespoon of oil. Add the sliced chicken and stir-fry until cooked through and slightly golden, about 5-6 minutes. Remove and set aside.
  4. Add the onion, red bell pepper, green bell pepper, and garlic to the wok. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Return the chicken and cashew nuts to the wok.
  6. In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, sugar, ground white pepper, and chicken broth.
  7. Pour the sauce over the chicken and vegetables in the wok. Stir well to coat everything evenly and cook for another 2-3 minutes until the sauce thickens slightly.
  8. Add the chopped green onions and give a final stir.
  9. Remove from heat and transfer to a serving dish.
