Cashew nut stir-fry
A flavorful stir-fry featuring cashew nuts, vegetables, and a savory sauce, often served with rice or noodles.
Instructions
- Heat 1 tablespoon of the vegetable oil in a large wok or skillet over medium-high heat.
- Add the cashew nuts and stir-fry for 2-3 minutes until they are golden brown. Remove and set aside.
- In the same wok, add the remaining 1 tablespoon of oil. Add the sliced chicken and stir-fry until cooked through and slightly golden, about 5-6 minutes. Remove and set aside.
- Add the onion, red bell pepper, green bell pepper, and garlic to the wok. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the chicken and cashew nuts to the wok.
- In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, sugar, ground white pepper, and chicken broth.
- Pour the sauce over the chicken and vegetables in the wok. Stir well to coat everything evenly and cook for another 2-3 minutes until the sauce thickens slightly.
- Add the chopped green onions and give a final stir.
- Remove from heat and transfer to a serving dish.
