Chicken with Cashew Nuts

A stir-fry dish with chicken, cashew nuts, vegetables, and a savory sauce.

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  2. Add the cashew nuts and stir-fry until golden brown, about 2-3 minutes. Remove and set aside.
  3. In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the chicken pieces and stir-fry until cooked through, about 5-6 minutes. Remove and set aside.
  4. Add the onion, red bell pepper, green bell pepper, and garlic to the wok. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
  5. Return the chicken to the wok. Add soy sauce, oyster sauce, sugar, chicken stock, and fish sauce. Stir well to combine, and let it cook for 2-3 minutes.
  6. Add the toasted cashew nuts and spring onions. Stir to combine and cook for an additional 1-2 minutes.
  7. Sprinkle ground white pepper over the dish, drizzle with sesame oil, and give a final toss.
  8. Remove from heat and serve immediately.
