Chicken with Cashew Nuts
A stir-fry dish with chicken, cashew nuts, vegetables, and a savory sauce.
Instructions
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Add the cashew nuts and stir-fry until golden brown, about 2-3 minutes. Remove and set aside.
- In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the chicken pieces and stir-fry until cooked through, about 5-6 minutes. Remove and set aside.
- Add the onion, red bell pepper, green bell pepper, and garlic to the wok. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
- Return the chicken to the wok. Add soy sauce, oyster sauce, sugar, chicken stock, and fish sauce. Stir well to combine, and let it cook for 2-3 minutes.
- Add the toasted cashew nuts and spring onions. Stir to combine and cook for an additional 1-2 minutes.
- Sprinkle ground white pepper over the dish, drizzle with sesame oil, and give a final toss.
- Remove from heat and serve immediately.
