Couscous salad
A refreshing North African dish made with fluffy couscous, fresh vegetables, herbs, and a zesty lemon dressing.
Instructions
- Place the couscous in a large heatproof bowl. Add the boiling water, 1/2 teaspoon salt, and 1 tablespoon olive oil. Stir to combine.
- Cover the bowl with a plate or plastic wrap and let it sit for 5-10 minutes, until the couscous has absorbed the water and is tender.
- Fluff the couscous with a fork to separate the grains.
- Add the cherry tomatoes, cucumber, red onion, parsley, and mint to the couscous. Toss gently to combine.
- In a small bowl, whisk together the lemon juice and ground cumin.
- Pour the lemon juice mixture over the couscous salad and toss to coat evenly.
- Season with additional salt and pepper to taste.
- Let the salad sit for at least 30 minutes in the refrigerator to allow the flavors to meld.
- Serve chilled or at room temperature.
