Couscous salad

A refreshing North African dish made with fluffy couscous, fresh vegetables, herbs, and a zesty lemon dressing.

Instructions

  1. Place the couscous in a large heatproof bowl. Add the boiling water, 1/2 teaspoon salt, and 1 tablespoon olive oil. Stir to combine.
  2. Cover the bowl with a plate or plastic wrap and let it sit for 5-10 minutes, until the couscous has absorbed the water and is tender.
  3. Fluff the couscous with a fork to separate the grains.
  4. Add the cherry tomatoes, cucumber, red onion, parsley, and mint to the couscous. Toss gently to combine.
  5. In a small bowl, whisk together the lemon juice and ground cumin.
  6. Pour the lemon juice mixture over the couscous salad and toss to coat evenly.
  7. Season with additional salt and pepper to taste.
  8. Let the salad sit for at least 30 minutes in the refrigerator to allow the flavors to meld.
  9. Serve chilled or at room temperature.
