Alfredo pasta
A creamy Italian pasta dish made with fettuccine noodles tossed in a rich sauce of butter, heavy cream, and Parmesan cheese.
Instructions
- Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1 cup (240ml) of pasta water and drain the rest.
- In a large skillet over medium heat, melt the butter. If using garlic, add it now and sauté for 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Reduce the heat to low and cook for 3-4 minutes, stirring occasionally.
- Gradually whisk in the Parmesan cheese until fully melted and smooth. If using Pecorino Romano, add it now.
- Season the sauce with white pepper and salt. Adjust to taste.
- Add the cooked fettuccine to the skillet and toss to coat the pasta in the sauce. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
- Remove from heat and sprinkle with fresh parsley before serving.
- Serve immediately with additional grated Parmesan if desired.
