Shutki Bhuna
A spicy stir-fry of dried fish cooked with onions, garlic, and chili.
Instructions
- Soak the dried fish in warm water for about 20 minutes to remove excess salt and soften it. Drain and set aside.
- Heat mustard oil in a pan over medium heat until it begins to smoke slightly.
- Add the sliced onions and sauté until they turn golden brown, about 8-10 minutes.
- Stir in the minced garlic, ginger paste, and slit green chilies, cooking for another 2 minutes until aromatic.
- Add the soaked dried fish to the pan, stirring well to combine with the onion mixture.
- Sprinkle in the turmeric, red chili, and cumin powders, stirring to coat the fish evenly with spices.
- Season with salt, remembering that the dried fish may still be slightly salty. Stir well.
- Reduce heat to low and cover the pan. Allow the mixture to cook for 10-15 minutes, stirring occasionally until the fish is tender and cooked through.
- Remove the lid and increase the heat slightly to evaporate any excess moisture, stirring continuously.
- Garnish with fresh coriander leaves and serve hot with steamed rice.
