Shutki Bhuna

A spicy stir-fry of dried fish cooked with onions, garlic, and chili.

Instructions

  1. Soak the dried fish in warm water for about 20 minutes to remove excess salt and soften it. Drain and set aside.
  2. Heat mustard oil in a pan over medium heat until it begins to smoke slightly.
  3. Add the sliced onions and sauté until they turn golden brown, about 8-10 minutes.
  4. Stir in the minced garlic, ginger paste, and slit green chilies, cooking for another 2 minutes until aromatic.
  5. Add the soaked dried fish to the pan, stirring well to combine with the onion mixture.
  6. Sprinkle in the turmeric, red chili, and cumin powders, stirring to coat the fish evenly with spices.
  7. Season with salt, remembering that the dried fish may still be slightly salty. Stir well.
  8. Reduce heat to low and cover the pan. Allow the mixture to cook for 10-15 minutes, stirring occasionally until the fish is tender and cooked through.
  9. Remove the lid and increase the heat slightly to evaporate any excess moisture, stirring continuously.
  10. Garnish with fresh coriander leaves and serve hot with steamed rice.
