Collard Green Soup

A hearty soup made with tender collard greens, onions, garlic, and a flavorful broth, often complemented by smoked meat or beans.

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Pour in the chicken or vegetable broth and bring to a boil.
  5. Add the chopped collard greens and smoked ham hock or turkey to the pot.
  6. Reduce the heat to low and simmer for 30-40 minutes, until the collard greens are tender.
  7. Stir in the cannellini beans, salt, black pepper, and red pepper flakes, if using.
  8. Continue to simmer for another 10-15 minutes to allow the flavors to meld.
  9. Remove the ham hock, shred the meat, and return it to the soup. Discard the bone.
  10. Taste and adjust seasoning as needed before serving.
