Collard Green Soup
A hearty soup made with tender collard greens, onions, garlic, and a flavorful broth, often complemented by smoked meat or beans.
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
- Pour in the chicken or vegetable broth and bring to a boil.
- Add the chopped collard greens and smoked ham hock or turkey to the pot.
- Reduce the heat to low and simmer for 30-40 minutes, until the collard greens are tender.
- Stir in the cannellini beans, salt, black pepper, and red pepper flakes, if using.
- Continue to simmer for another 10-15 minutes to allow the flavors to meld.
- Remove the ham hock, shred the meat, and return it to the soup. Discard the bone.
- Taste and adjust seasoning as needed before serving.
