Chili con carne
A hearty stew made with ground meat, chili peppers, tomatoes, beans, and spices.
Instructions
- Heat vegetable oil in a large pot over medium heat. Add onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Increase the heat to medium-high and add the ground beef. Cook, breaking up the meat with a wooden spoon, until browned, about 8 minutes.
- Stir in cumin, chili powder, paprika, salt, and black pepper, cooking for 1 minute until fragrant.
- Add the diced tomatoes with their juice, kidney beans, beef broth, tomato paste, and chopped jalapeño to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally.
- Uncover the pot and continue simmering for an additional 15 minutes to allow the flavors to meld and the chili to thicken.
- Stir in lime juice and adjust seasoning with more salt if needed.
- Serve hot with toppings like sour cream, shredded cheese, or chopped cilantro, if desired.
