Cevizli Sucuk

Candied walnuts strung on a thread and dipped in grape molasses, dried into a chewy snack.

Instructions

  1. Thread the walnut halves onto the cotton thread using a needle, leaving a small space between each nut. Tie a knot at each end to secure the walnuts on the string.
  2. Mix the grape molasses and water in a large saucepan over medium heat, stirring to combine.
  3. In a separate bowl, mix the flour, cornstarch, cinnamon, and salt. Gradually add this dry mixture to the molasses and water, whisking continuously to prevent lumps.
  4. Bring the mixture to a gentle boil, stirring constantly, until it thickens to a pudding-like consistency. This should take about 10-15 minutes.
  5. Remove the thickened molasses mixture from the heat and let it cool slightly.
  6. Dip the threaded walnuts into the molasses mixture, ensuring they are completely coated. Hang the thread over a long pole or stick, allowing excess molasses to drip off.
  7. Repeat the dipping process 2-3 more times, allowing the mixture to dry slightly between each coat, until a thick layer is achieved.
  8. Once the final layer is applied, hang the walnut strings in a cool, dry place to allow them to dry completely. This can take up to 3-5 days, depending on humidity.
  9. Once dry, carefully remove the walnuts from the thread and store them in an airtight container.
