Bruschetta

An Italian appetizer consisting of grilled bread rubbed with garlic and topped with olive oil, tomatoes, basil, and sometimes other ingredients like mozzarella or prosciutto.

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet.
  2. Brush each slice lightly with olive oil on both sides. Toast in the oven for about 5-7 minutes, or until golden brown and crispy.
  3. While the bread is toasting, prepare the topping. In a medium bowl, combine the diced tomatoes, 1/4 cup olive oil, chopped basil, salt, pepper, and balsamic vinegar. Stir to combine and let it sit for about 10 minutes to allow the flavors to meld.
  4. Remove the toasted bread from the oven. While still warm, rub the cut side of the garlic cloves over the top of each slice to infuse them with garlic flavor.
  5. If using, place a slice of mozzarella on each bread slice and return to the oven for 2-3 minutes until the cheese is slightly melted.
  6. Top each garlic-rubbed slice with a generous spoonful of the tomato mixture, ensuring each piece is covered.
  7. If using prosciutto, add a small slice over the tomato mixture.
  8. Transfer the bruschetta to a serving platter.
  9. Drizzle with a little more olive oil and a pinch of salt if desired.
