Bruschetta
An Italian appetizer consisting of grilled bread rubbed with garlic and topped with olive oil, tomatoes, basil, and sometimes other ingredients like mozzarella or prosciutto.
Instructions
- Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet.
- Brush each slice lightly with olive oil on both sides. Toast in the oven for about 5-7 minutes, or until golden brown and crispy.
- While the bread is toasting, prepare the topping. In a medium bowl, combine the diced tomatoes, 1/4 cup olive oil, chopped basil, salt, pepper, and balsamic vinegar. Stir to combine and let it sit for about 10 minutes to allow the flavors to meld.
- Remove the toasted bread from the oven. While still warm, rub the cut side of the garlic cloves over the top of each slice to infuse them with garlic flavor.
- If using, place a slice of mozzarella on each bread slice and return to the oven for 2-3 minutes until the cheese is slightly melted.
- Top each garlic-rubbed slice with a generous spoonful of the tomato mixture, ensuring each piece is covered.
- If using prosciutto, add a small slice over the tomato mixture.
- Transfer the bruschetta to a serving platter.
- Drizzle with a little more olive oil and a pinch of salt if desired.
