Gnocchi alla Sorrentina

A comforting Italian dish of potato gnocchi baked with tomato sauce, mozzarella, and Parmesan cheese.

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the canned tomatoes (crush them with your hands as you add them), salt, pepper, and oregano to the skillet. Simmer for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Add the cooked gnocchi to the tomato sauce, stirring gently to coat them evenly.
  6. Transfer the gnocchi and sauce to a baking dish. Top with slices of mozzarella cheese and sprinkle with grated Parmesan cheese.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
