chestnut stuffing

A savory stuffing made with roasted chestnuts, bread, herbs, onions, and sometimes sausage or mushrooms, often served as a side dish or holiday accompaniment.

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a large baking dish.
  2. If using, cook the sausage meat in a skillet over medium heat until browned. Remove and set aside. If using mushrooms, sauté them in olive oil until soft and set aside.
  3. In the same skillet, melt the butter and add the olive oil. Sauté the onion and celery until softened, about 5-7 minutes.
  4. Add the chopped chestnuts, thyme, and sage to the skillet. Stir well to combine and cook for another 2 minutes.
  5. In a large mixing bowl, combine the bread cubes with the sautéed mixture. Add the sausage or mushrooms if using.
  6. Gradually pour the chicken or vegetable stock over the mixture, stirring gently until the bread is moistened but not soggy. Season with salt and pepper to taste.
  7. Transfer the stuffing mixture to the prepared baking dish, spreading it evenly.
  8. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and crispy.
  9. Remove from the oven and let it cool slightly before serving.
  10. Serve as a side dish alongside roasted meats or as part of a holiday feast.
