Brussels sprout Caesar salad

A modern twist on Caesar salad featuring shaved Brussels sprouts, Parmesan cheese, croutons, and a creamy Caesar dressing.

Instructions

  1. In a large bowl, combine the thinly sliced Brussels sprouts and grated Parmesan cheese.
  2. In a separate small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, minced anchovies, minced garlic, and black pepper until smooth.
  3. Gradually add the olive oil to the dressing mixture while continuing to whisk, creating a creamy emulsion.
  4. Pour the dressing over the Brussels sprouts and Parmesan in the large bowl.
  5. Toss everything together until the Brussels sprouts are evenly coated with the dressing.
  6. Add the croutons to the salad and gently toss again to distribute them evenly.
  7. Let the salad sit for about 10 minutes to allow the flavors to meld and the Brussels sprouts to slightly soften.
  8. Give the salad a final toss before serving to ensure the dressing is well distributed.
